Our recent Ladies Night Event was a huge hit, and visitors who joined us couldn't stop talking about the delicious Blueberry Wild Rice Salad that was provided by Maureen from West Coast Gardens! We're happy to share the recipe with you (consider it a family secret, fellow gardener!) Quick and easy, but mmmm so good!
Blueberry Wild Rice Salad
Salad Ingredients:
1 cup uncooked wild rice (soak overnight for best results)
2 cups chicken broth or water
Prepare rice by cooking for 30 minutes or until tender, then cool.
1/3 cup chopped pine nuts or 1/3 cup sunflower seeds
1/2 cup dried cranberries
3/4 cups chopped dried apricots
1/2 chopped red onion
Stir nuts, seeds, cranberries, apricots and onions into rice.
Dressing Ingredients:
1/4 cup lime juice
2 tbsp honey
1 1/2 tsp grated ginger
1 tsp grated lime peel
6 tbsp olive oil
In a bowl whisk together the dressing ingredients, pour over rice and mix well. Add salt and pepper to taste.
Where's the blueberries? Gently fold in 1 cup fresh blueberries to the finished salad.
This delicious dish can be served by itself, or over salad greens!
